Glutenfree Granola, vegan

Granola is great for breakfast or as a sweet and still healthy snack. To find glutenfree Granola in a supermarket is hard, if not impossible, especially if you can’t eat oats or almonds.

Glutenfree Granola



  • 2 tbsp coconut oil
  • 2 tbsp agave syrup
  • 1/2 tsp cinnamon
  • 1-2 tsp cashew puree
  • 1 tsp vanilla powder (no vanilla sugar!)
  • 4 tbsp chopped pekan nuts
  • 5 tbsp soyflakes
  • 5 tbsp popped amaranth
  • 5 tbsp corn cornflakes


From the coconut oil to the vanilla powder, mix everything together. Preheat the oven to 150°C. Add the other ingredients to the bowl one after another and keep stirring. Cover an oven tray with a baking sheet, then spread the mixture evenly on it. Bake it for 10 minutes with the tray on the middle rail, then turn off the heat and leave it in the oven for another 5 minutes. Once the time is over take it out and let it cool.
