Shredded Chicken Noodles is basically just Italian shredded chicken on noodles. 🙂 I don’t know how else to explain it, but this is what it is.
Shredded Chicken Noodles
- 125g chicken breast
- 2 hand full gluten free pene noodles
- 150ml sieved tomatoes
- 4 big mushrooms
- 1 small mozzarella cheese
- 1tbsp dried Italian herbs
Wash the chicken and pat it dry, then place it in a casserole dish and put it into the oven. Turn your oven to 150° C. It’s important that you don’t preheat it!
Bake for 20 minutes, then check if you can already pull the chicken apart with two forks. If you can’t leave it in the oven for another 10 minutes.
While the chicken is in the oven mix the sieved tomatoes with the herbs, salt and pepper. Cut the mushrooms into slices and the mozzarella as well.
Once you can, pull the chicken apart with two forks. Add the tomato sauce, then the mushrooms and mozzarella. Mix everything and put it back into the oven.
After ten minutes put a pot on the stove and boil water on it. Add the noodles and cook them for 8 minutes. Drain the noodles and put them on a plate, then add the shredded chicken.
