Walnut Pancakes (Vegan)

Everyone loves pancakes. They can be sweet or savory. And everyone can eat them. At least everyone can eat these. They are gluten free, lactose free and vegan. The soy milk can be swapped with any other milk-like product and the soy flour can be switched with no-egg.

Walnut Pancakes

Ingredients for 12 Pancakes

  • 2 EL Tigernut powder
  • 6 EL grushed walnuts
  • 6 EL light gluten free flour
  • 8 EL buckwheat flour
  • 2 EL brown sugar
  • pinch of salt
  • 2 EL soy flour
  • 400ml vanilla soy milk
  • 300ml lukewarm water

Instructionsbatter for walnut pancakes

Mix the dry ingredients together, then slowly add the fluids.

Let the batter rest for at least 30 minutes in a warm place.

Fry them in a pan at middle heat with a little plant oil.
