Baked green Asparagus with Feta and Walnuts

This is, hands down, the best recipe for green asparagus. I never liked asparagus, neither the white, nor the green. But when I made this for the first time for my mother, who is a big fan of it, I sort of became addicted… Now when it’s the time of year asparagus is growing and thus is affordable I eat it almost every day.

  • a bunch of green asparagus
  • one package of feta
  • 200g walnuts
  • vegetable oil
  • pepper

instructions

Preheat the oven at 200° Celcius.

Wash the asparagus and cut off half an inch from the ends. Spread them evenly on a tray and put them into the oven for 15 minutes.

In the meantime you can crush the walnuts and open the feta package.

Then take the tray out of the oven. Drizzle the asparagus with oil (not too much or everything will get gooey) then spread the crushed walnuts over them evenly. Pluck the feta apart and cover everything in it as well. Put it back into the oven for another 20 minutes.

Take it out, season it with pepper, then serve.
